  • 1 lb lean ground beef (80/20)
  • 2 medium sweet yellow onions, thinly sliced
  • 4 slices Swiss cheese
  • 4 tbsp butter
  • 4 slices rye or sourdough bread
  • Salt and pepper to taste

Instructions

  1. Caramelize the onions by melting 2 tbsp of butter in a skillet over medium heat. Add the sliced onions and cook for 20-25 minutes until golden brown.
  2. While the onions cook, season the ground beef with salt and pepper and form it into four patties.
  3. In another skillet, melt remaining butter over medium-high heat and sear each patty for about 4 minutes per side. Add Swiss cheese on top during the last minute of cooking.
  4. Butter one side of each slice of bread. Assemble sandwiches by placing one slice butter-side down in a skillet, adding a patty with melted cheese, caramelized onions, and topping with another slice of bread.
  5. Grill each sandwich over medium heat until golden brown on both sides (about 3 minutes per side). Slice diagonally and serve immediately.
