Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and a pinch of salt.
  3. In another bowl, beat together the granulated sugar, brown sugar, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients while stirring gently until just combined. Fold in nuts if using.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean from the center.
  6. Allow to cool completely before cutting into squares.
