  • 1 cup purple cabbage, shredded
  • 1 medium carrot, thinly sliced
  • 1 bell pepper (any color), sliced
  • 2 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 8 oz protein (chicken, tofu, or shrimp)

Instructions

  1. Prepare all ingredients by chopping vegetables and mincing garlic and ginger.
  2. Cook lo mein noodles according to package directions until al dente; drain and toss with a bit of oil.
  3. Heat sesame oil in a large skillet over medium heat. Sauté garlic and ginger until fragrant (about 30 seconds).
  4. Add cabbage, carrots, bell pepper, and chosen protein to the skillet. Stir-fry for about five minutes until veggies are tender-crisp.
  5. Pour soy sauce over the mixture and add cooked noodles. Toss gently until well combined.
