  • 3 green onions, finely chopped

Instructions

  1. Boil potatoes in salted water until fork-tender, about 15-20 minutes. Let cool slightly.
  2. Cut each potato in half lengthwise and scoop out the insides into a bowl, leaving about ¼ inch of flesh.
  3. Mix the scooped potato with mayonnaise, Dijon mustard, green onions, salt, and pepper until creamy.
  4. Spoon the mixture back into the potato skins and smooth the tops.
  5. Sprinkle paprika over each filled potato half and place them on a baking sheet.
  6. Bake at 400°F (200°C) for 15-20 minutes until golden brown.
