  • 1 cup black beans (canned, drained and rinsed)
  • 1 cup kidney beans (canned, drained and rinsed)
  • 1 cup chickpeas (canned, drained and rinsed)
  • 1 cup bell peppers (diced; mix of red, yellow, and green)
  • 1/2 cup red onion (finely chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or agave syrup
  • Salt and pepper to taste

Instructions

  1. Rinse all canned beans under cold water and drain well.
  2. Dice the bell peppers and red onion into small pieces. Halve the cherry tomatoes.
  3. In a large bowl, combine the beans, bell peppers, red onion, tomatoes, and cilantro.
  4. In a separate bowl, whisk together olive oil, lime juice, honey or agave syrup, salt, and pepper until combined.
  5. Pour the dressing over the salad ingredients and toss gently until well coated. Allow it to sit for about ten minutes for flavors to meld.
  6. Serve chilled or at room temperature.
