Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the pork generously with salt and pepper. Rub minced garlic and thyme over the meat.
  3. Place the roast in a roasting pan, bone-side down, and add pork stock around it.
  4. Roast for approximately 1 hour and 15 minutes or until the internal temperature reaches 145°F (63°C).
  5. While the pork roasts, combine cherries, red wine, brown sugar, salt, and pepper in a saucepan over medium heat. Cook for about 15 minutes until the sauce has thickened.
  6. Let the roast rest for 15 minutes before carving and serving drizzled with cherry sauce.
