  • 4 boneless, skinless chicken breasts (680g)
  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes, chopped (preferably oil-packed)
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, sear the chicken for about 6-7 minutes per side until golden brown. Remove from skillet and set aside.
  3. Reduce heat to medium in the same skillet and sauté minced garlic until fragrant (about 1 minute). Add chopped sun-dried tomatoes and cook for another minute.
  4. Stir in fresh spinach until wilted (about 2 minutes).
  5. Pour in heavy cream and sprinkle with Italian seasoning; stir gently until combined. Let simmer on low heat until slightly thickened.
  6. Return chicken to the pan and spoon sauce over each piece. Top with grated Parmesan before serving.
