  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken for 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
  2. In the same skillet, sauté minced garlic for about 1 minute until fragrant. Add sun-dried tomatoes and cook for another minute.
  3. Pour in heavy cream and chicken broth; scrape up any brown bits from the pan. Bring to a simmer before adding grated Parmesan cheese, stirring until melted.
  4. Fold in fresh spinach until wilted (about 2 minutes). Optionally add crushed red pepper flakes for a touch of heat.
  5. Return the cooked chicken to the skillet and spoon sauce over it. Let simmer together for an additional 5 minutes.
