  • 1 (12-14 lb) whole turkey
  • 1 cup unsalted butter, softened
  • 6 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • 1 lemon, halved
  • 1 onion, quartered
  • Salt and pepper to taste

Instructions

  1. Thaw the turkey if frozen and remove any giblets from inside. Pat dry with paper towels.
  2. Preheat the oven to 325°F (165°C). Season the turkey generously inside and out with salt and pepper.
  3. In a bowl, mix softened butter with minced garlic and chopped herbs until well combined.
  4. Carefully lift the turkey skin and spread half of the herb-butter mixture under the skin on the meat. Apply the remaining mixture over the outside of the turkey.
  5. Stuff the cavity with quartered onion and halved lemon.
  6. Place the turkey breast-side up on a rack in a roasting pan and roast for approximately 13 minutes per pound until it reaches an internal temperature of 165°F (75°C), basting every 30 minutes.
