- 1/4 cup extra virgin olive oil
- 2 tbsp honey
- 2 tbsp whole grain mustard
- 4 cloves garlic (minced)
- 2 lemons (zested and juiced)
- 2 oranges (zested and juiced)
- 1/4 cup fresh rosemary (chopped)
- 1/4 cup fresh thyme (chopped)
- 1/4 cup fresh parsley (chopped)
- Salt and pepper to taste
- Optional: 1/2 cup unsalted butter (softened)
- Preheat oven to 450°F (230°C). Rinse the turkey under cold water and pat dry.
- Spatchcock the turkey by removing the backbone with kitchen shears, then flatten it by pressing down on the breastbone.
- In a bowl, mix olive oil, honey, mustard, minced garlic, lemon juice, orange zest, chopped herbs, salt, and pepper. Rub this mixture all over the turkey.
- Place the turkey on a baking sheet and roast for 1 hour and 15 minutes or until it reaches an internal temperature of 165°F (75°C).
- Let the turkey rest for at least 20 minutes before carving and serving.
