  • 1/4 cup extra virgin olive oil
  • 2 tbsp honey
  • 2 tbsp whole grain mustard
  • 4 cloves garlic (minced)
  • 2 lemons (zested and juiced)
  • 2 oranges (zested and juiced)
  • 1/4 cup fresh rosemary (chopped)
  • 1/4 cup fresh thyme (chopped)
  • 1/4 cup fresh parsley (chopped)
  • Salt and pepper to taste
  • Optional: 1/2 cup unsalted butter (softened)

Instructions

  1. Preheat oven to 450°F (230°C). Rinse the turkey under cold water and pat dry.
  2. Spatchcock the turkey by removing the backbone with kitchen shears, then flatten it by pressing down on the breastbone.
  3. In a bowl, mix olive oil, honey, mustard, minced garlic, lemon juice, orange zest, chopped herbs, salt, and pepper. Rub this mixture all over the turkey.
  4. Place the turkey on a baking sheet and roast for 1 hour and 15 minutes or until it reaches an internal temperature of 165°F (75°C).
  5. Let the turkey rest for at least 20 minutes before carving and serving.
