  • ½ teaspoon salt
  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil or melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the bananas until smooth but slightly chunky.
  3. Stir in sugars, oil (or melted butter), and eggs until just combined.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet mixture without over-mixing.
  5. In a small bowl, mix some sugar with extra cinnamon. Pour half of the batter into the pan, sprinkle with half of the cinnamon-sugar mixture, then layer with remaining batter and topping. Gently swirl with a knife.
  6. Bake for about 60 minutes or until a toothpick comes out clean. Cool slightly before slicing.
