  • ½ cup fresh cilantro, chopped
  • ½ red onion, thinly sliced
  • 1 avocado, diced
  • 1 tbsp olive oil

  2. Meanwhile, heat olive oil in a skillet over medium-high heat. Add shrimp and cook until pink and opaque (3-4 minutes), flipping halfway.
  3. Stir in chipotle peppers and lime juice to coat shrimp evenly.
  4. Remove from heat; fold in cilantro and red onion.
