  • 3 cloves garlic, minced
  • 1 tsp cayenne pepper (adjust to taste)

Instructions

  1. Chop onions, bell peppers, celery, and garlic.
  2. In a large pot over medium heat, add oil and sear chicken thighs until browned (5 minutes per side). Remove and set aside.
  3. In the same pot, sauté onions, bell peppers, celery, and garlic until softened (5-7 minutes).
  4. Add sliced Andouille sausage and cook for another 5 minutes.
  5. Pour in chicken stock while scraping any bits from the pot; return chicken along with cayenne pepper and thyme.
  6. Bring to a simmer and cover; cook for at least an hour to meld flavors.
  7. Serve hot over rice or with crusty bread.
