Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix oil and eggs until combined. Stir in shredded carrots and walnuts if using.
  4. Gently combine wet and dry ingredients until just mixed; avoid overmixing.
  5. Pour batter into the prepared dish and bake for about 25-30 minutes or until a toothpick comes out clean.
  6. Allow bars to cool completely before making the frosting by beating cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until fluffy.
