  • 1 whole turkey (1214 pounds), thawed
  • 1 cup unsalted butter
  • 3 tablespoons fresh rosemary, chopped
  • 3 tablespoons fresh thyme, chopped
  • 3 tablespoons fresh sage, chopped
  • 4 cloves garlic, minced
  • 1 lemon, cut into wedges
  • Salt and pepper to taste
  • 2 cups carrots, cut into large chunks
  • 2 cups onions, cut into large chunks

Instructions

  1. Preheat the oven to 325°F (165°C). Remove giblets from the turkey and pat dry with paper towels.
  2. In a saucepan over medium heat, melt the butter until golden brown and aromatic.
  3. Stir in minced garlic and fresh herbs; simmer for 2 minutes.
  4. Rub half of the herb-infused butter mixture under the skin and on top of the turkey. Season generously with salt and pepper.
  5. Stuff lemon wedges and herb sprigs inside the cavity of the turkey.
  6. Place the turkey breast-side up on a rack in a roasting pan with carrot and onion chunks. Drizzle remaining brown butter over everything and cover loosely with foil.
  7. Roast for approximately 2 hours, basting every 30 minutes until the internal temperature reaches 165°F (75°C). Remove foil for the last 30 minutes to achieve golden brown skin.
  8. Let rest for at least 30 minutes before carving.
