  • 2 tbsp extra-virgin olive oil
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 medium carrots, chopped
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season short ribs with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear short ribs on all sides until browned (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, sauté chopped onions and carrots until softened (about 5 minutes). Add minced garlic and cook for another minute.
  4. Deglaze the pot with red wine, scraping up brown bits; simmer until reduced by half.
  5. Return short ribs to the pot, add beef broth, thyme, bay leaves, and more salt if desired. Bring to a simmer.
  6. Cover and braise in the preheated oven for about 3 hours until tender.
  7. Serve with creamy mashed potatoes or crusty bread to soak up the delicious sauce.
