  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp pepper (adjust to taste)
  • 1 baguette or crostini (about 10 slices)

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the baguette diagonally into approximately 10 pieces.
  2. In a medium bowl, combine black-eyed peas, red onion, cilantro, garlic, lime juice, olive oil, salt, and pepper. Stir gently without mashing the peas.
  3. Arrange the sliced bread on a baking sheet. Drizzle with olive oil and toast in the oven for about 8–10 minutes until golden brown.
  4. Once toasted and slightly cooled, spoon the black-eyed pea mixture onto each slice of bread. Garnish with additional cilantro if desired.
  5. Serve immediately while warm.
