  • 2 lbs Yukon Gold or Red potatoes, cut into 1-inch pieces
  • 8 oz block feta cheese
  • 4 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a large bowl, toss potato pieces with olive oil, garlic, rosemary, thyme, salt, and pepper until well-coated.
  3. Layer half of the seasoned potatoes in the baking dish. Place the feta block in the center and top with remaining potatoes. Drizzle with additional olive oil if desired.
  4. Bake in the preheated oven for 35-40 minutes until potatoes are tender and golden brown.
  5. Let cool slightly before serving. Drizzle with more olive oil if desired.
