  • 8 oz penne pasta
  • 8 oz block feta cheese
  • 2 cups cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). In an oven-safe baking dish, combine cherry tomatoes, feta cheese, minced garlic, and drizzle with olive oil. Season with oregano, red pepper flakes, salt, and pepper.
  2. Bake for 30-35 minutes or until tomatoes are blistered and feta is soft.
  3. While baking, cook the pasta according to package instructions until al dente; reserve some pasta water before draining.
  4. Once out of the oven, mash the feta and mix it with the tomatoes using a fork. Toss in the cooked pasta along with reserved pasta water until well combined.
  5. Serve immediately, garnished with fresh basil or parsley if desired.
