  • 2 tbsp olive oil

Instructions

  1. Boil salted water in a large pot. Cook pasta until al dente, reserving 1/2 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Season salmon with salt and pepper, cooking skin-side down for about 4 minutes on each side until golden brown and flaky. Remove and set aside.
  3. In the same skillet, sauté garlic for about one minute until fragrant.
  4. Add heavy cream and stir gently as it simmers. Gradually mix in Parmesan cheese until melted; if too thick, add reserved pasta water.
  5. Break salmon into bite-sized pieces and return to the skillet along with cooked pasta and spinach. Toss gently to combine.
