Ingredients

Scale
  • 9 lasagna noodles (regular or no-boil)
  • 1 lb fresh shrimp (peeled and deveined)
  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • ¾ cup freshly grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 3 cloves garlic (minced)
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 1 cup fresh spinach (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and gather all ingredients.
  2. In a skillet over medium heat, melt 1 tbsp butter, add minced garlic, and sauté for about one minute until fragrant. Add shrimp; cook until pink (about 3 minutes per side). Remove from heat.
  3. In the same skillet, melt another tablespoon of butter. Whisk in flour for about two minutes until golden brown. Gradually add milk, whisking continuously until thickened.
  4. In a bowl, mix ricotta with half the mozzarella and Parmesan; season with salt and pepper. Stir in spinach if using.
  5. Spread some white sauce in a lasagna dish. Layer noodles, ricotta mixture, shrimp, and more sauce. Repeat until ingredients are used up, finishing with noodles topped with remaining cheeses.
  6. Cover with foil; bake for 30 minutes. Remove foil for the last 10 minutes to brown the top.
