  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup unsalted butter (1 stick)
  • 1 tbsp espresso powder
  • 8 oz mascarpone cheese
  • 2 tsp vanilla extract
  • ½ cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a medium saucepan over low heat, melt the butter. Remove from heat and stir in sugar, cocoa powder, eggs, espresso powder, and vanilla extract until well combined.
  3. Sift in flour and mix until just combined for a thick batter.
  4. Pour into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out mostly clean.
  5. While baking, whip mascarpone cheese with sugar and vanilla until smooth.
  6. Once brownies cool slightly, spread the mascarpone mixture on top and refrigerate for at least an hour before slicing.
