Ingredients

Scale
  • 2 salmon fillets (6 oz each)
  • 1 sheet puff pastry (thawed)
  • 1 cup fresh spinach (sautéed)
  • 4 oz cream cheese (softened)
  • 2 tbsp fresh dill (chopped)
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté the spinach in a skillet over medium heat until wilted, about 3 minutes. Let it cool slightly, then mix with cream cheese, dill, salt, and pepper.
  3. Roll out the puff pastry on a floured surface and cut into squares large enough to wrap each salmon fillet. Place a spoonful of the spinach mixture in the center of each square followed by a salmon fillet.
  4. Fold the pastry over the salmon and filling, sealing edges by crimping with fingers or using a fork. Brush tops with beaten egg for a golden finish.
  5. Bake on the prepared baking sheet for 20-25 minutes or until golden brown.
