  2. Drain and rinse the soaked beans. In a pot, combine the beans with 4 cups of fresh water and bring to a boil over medium heat.
  3. Lower the heat and simmer for about an hour until tender.
  4. Stir in sugar, soy sauce, and mirin; simmer for another 30 minutes until thickened into a syrupy glaze.
  5. Cool slightly before serving warm or chilled.
