Ingredients

Scale
  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan.
  2. In a large bowl, mix melted butter and cocoa powder until combined. Add sugar, then eggs one at a time, mixing well after each addition. Stir in vanilla and fold in half of the chocolate chips.
  3. Pour the brownie batter into the prepared pan; sprinkle remaining chocolate chips on top. Bake for 20-25 minutes until a toothpick comes out mostly clean. Let cool.
  4. Whip heavy cream until soft peaks form. Melt additional chocolate chips and fold into whipped cream to create mousse.
  5. Spread mousse evenly over cooled brownies and refrigerate for at least an hour before slicing and serving.
