  • 1 Crown Roast of Pork (810 ribs)
  • 8 Garlic cloves, minced
  • 2 tbsp Fresh rosemary, chopped
  • 2 tbsp Fresh thyme, chopped
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 3 tbsp Olive oil
  • 2 cups Carrots, chopped
  • 2 cups Onions, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Pat the pork dry with paper towels and season inside and out with salt and pepper.
  2. In a bowl, combine minced garlic, olive oil, rosemary, and thyme. Rub this mixture all over the pork crown.
  3. Place chopped vegetables around the roast in a roasting pan to absorb juices while cooking.
  4. Roast in the oven until an internal temperature of 145°F (63°C) is reached (about 2 hours).
  5. Let rest for at least 15 minutes before carving into individual chops; serve on a platter garnished with fresh herbs.
