  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup white miso paste
  • 1/4 cup unsalted butter (melted)
  • 4 garlic cloves (minced)
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar

Instructions

  1. In a large bowl, mix miso paste, melted butter, minced garlic, honey, soy sauce, and rice vinegar. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. Prepare a baking dish by spraying it with nonstick cooking spray.
  4. Place the marinated chicken in the baking dish and pour remaining marinade over it. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  5. Allow to rest for 5 minutes before slicing and serve over rice or vegetables.
