  • 1 cup rolled oats
  • 1/4 cup fresh parsley, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup low-sugar ketchup (divided)
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare your slow cooker by spraying the insert with nonstick cooking spray.
  2. In a large bowl, combine ground beef, oats, parsley, onion, garlic, eggs, Worcestershire sauce, half the ketchup, salt, and pepper. Mix gently until combined.
  3. Shape the mixture into a loaf and place it in the slow cooker.
  4. Spread the remaining ketchup over the top of the meatloaf.
  5. Cover and cook on low for 6-8 hours or until the internal temperature reaches 160°F (70°C).
  6. Let rest for 10 minutes before slicing and serving.
