  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup cucumbers, diced
  • 1 avocado, sliced
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 0.5 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a pot, combine quinoa with 2 cups water or vegetable broth. Bring to a boil, then cover and simmer on low for about 15 minutes until liquid is absorbed.
  2. While quinoa cooks, chop bell peppers and cucumbers into bite-sized pieces.
  3. In a bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Once cooked, fluff quinoa with a fork and mix in chopped vegetables and chickpeas. Drizzle dressing over the mixture.
  5. Serve in bowls topped with avocado slices and additional lemon juice if desired.
