Instructions

  1. Wash the radishes thoroughly and slice them into quarters. Chop the onion and mince the garlic.
  2. In a large pot over medium heat, warm the olive oil until shimmering. Sauté the chopped onion for about 5 minutes until translucent.
  3. Add the quartered radishes and minced garlic, cooking for an additional 3-4 minutes until slightly softened.
  4. Pour in vegetable broth until it covers the vegetables by about an inch. Bring to a gentle simmer and cook for 15-20 minutes until tender.
  5. Stir in coconut milk and lemon juice, simmering for another 5 minutes.
