  • 45 lbs skin-on turkey breast
  • 10 cloves fresh garlic, minced
  • 2 medium oranges, halved
  • 2 medium lemons, halved
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp honey

Instructions

  1. Preheat oven to 375°F (190°C) and line a roasting pan with parchment paper.
  2. In a bowl, mix olive oil, minced garlic, honey, salt, pepper, rosemary, and thyme until well combined.
  3. Place the turkey breast in the roasting pan. Loosen the skin gently and rub half the marinade under the skin and on top.
  4. Insert orange and lemon halves inside and around the turkey.
  5. Roast for about 1 hour or until internal temperature reaches 165°F (74°C), basting with pan juices every 20 minutes.
  6. Let the turkey rest for at least 10 minutes before slicing. Drizzle with remaining pan juices for serving.
