  • 200g wild garlic leaves, washed and chopped
  • 300g Yukon Gold potatoes, diced (about 2 medium)
  • 1 medium onion, chopped
  • 1 liter low-sodium vegetable stock
  • 2 tbsp olive oil
  • 100ml cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
  2. Add the diced potatoes and cook for an additional 2 minutes.
  3. Pour in the vegetable stock to cover the ingredients; bring to a gentle boil. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  4. Blend the soup until smooth using an immersion blender. If using a standard blender, be cautious with hot liquids.
  5. Stir in the wild garlic leaves and let them wilt for about 3 minutes. Optionally add cream before serving.
  6. Serve warm, garnished with extra cream or herbs if desired.
