  • 2 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar

  • 1 cup protein (shrimp, chicken, or tofu)
  • 1 cup bell peppers, sliced
  • 1/2 cup green onions, chopped
  • 2 large eggs
  • 1 cup bean sprouts
  • 2 tbsp vegetable oil

Instructions

  1. Soak the rice noodles in warm water for about 15 minutes until softened. Drain and set aside.
  2. In a bowl, whisk together tamarind paste, soy sauce, brown sugar, and chili powder until smooth.
  3. Heat oil in a large pan over medium-high heat. Cook your chosen protein until golden brown (5–7 minutes).
  4. Add bell peppers and green onions; stir-fry for a few minutes until tender-crisp. Push to one side and scramble the eggs in the center until just set.
  5. Combine drained noodles with the sauce in the pan. Toss everything gently for about 2–3 minutes until evenly coated.
  6. Serve garnished with bean sprouts and lime wedges.
