  • 1 lb shrimp, peeled and deveined
  • 8 oz smoked Andouille sausage, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced

  • 4 cloves garlic, minced
  • 14.5 oz can diced tomatoes
  • 3 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 2 cups long-grain rice

Instructions

  1. In a large pot over medium heat, add 2 tsp olive oil. Brown the chicken and sausage for about 5 minutes until golden.
  2. Add onion, bell peppers, and garlic; sauté for an additional 5 minutes until softened.
  3. Stir in the Cajun seasoning and diced tomatoes until well combined.
  4. Pour in the chicken broth and bring to a boil. Lower the heat to simmer for about 20 minutes.
  5. Add rice and mix well; cover and cook until rice is tender.
  6. During the last 5 minutes of cooking, stir in shrimp until pink and cooked through.
