  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted pistachios, crushed (plus extra for garnish)
  • 1 cup fresh raspberries, chopped
  • 1 tsp vanilla extract
  • 1 tbsp gelatin powder
  • 2 tbsp warm water

Instructions

  1. Prepare silicone molds or muffin tins lined with paper liners.
  2. In a food processor, crush half of the pistachios; set aside remaining nuts for garnish.
  3. In a mixing bowl, blend softened cream cheese, sour cream, sugar, and vanilla until smooth.
  4. Dissolve gelatin in warm water and mix it into the cheesecake mixture until fully incorporated.
  5. Gently fold in chopped raspberries and half of the crushed pistachios.
  6. Spoon the mixture into prepared molds and smooth the tops. Refrigerate for at least four hours or until set.
  7. Once set, pop the domes out of their molds and garnish with remaining crushed pistachios and fresh raspberries.
