Instructions

  1. Preheat oven to 325°F (160°C). Arrange six ramekins in a baking dish.
  2. In a saucepan, combine heavy cream, granulated sugar, and espresso powder over medium heat until just simmering.
  3. Remove from heat and stir in chopped dark chocolate until melted and smooth.
  4. Whisk egg yolks and vanilla extract in a bowl, then gently incorporate into the chocolate mixture until completely blended.
  5. Pour custard into ramekins, filling three-quarters full. Place baking dish in the oven and fill with hot water halfway up the ramekins.
  6. Bake for 30-35 minutes until edges are set but center is slightly jiggly. Chill for at least two hours or overnight.
  7. Before serving, sprinkle turbinado sugar on top and use a kitchen torch to caramelize until golden brown.
