  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups mixed greens (romaine, spinach, arugula)
  • 1 cup shredded carrots
  • 1 medium cucumber, thinly sliced

  • 3 tbsp sesame oil
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp rice vinegar

Instructions

  1. Preheat the oven to 400°F (200°C). Place chicken breasts on a parchment-lined baking tray, season with salt and pepper, and roast for 25-30 minutes until cooked through.
  2. While the chicken cooks, wash and chop mixed greens, carrots, cucumber, and bell peppers into bite-sized pieces.
  3. In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil until well combined.
  4. Once the chicken is cooked, let it rest for five minutes before slicing it into strips.
  5. In a large bowl, combine mixed greens with chopped veggies and sliced chicken. Drizzle with dressing and toss everything together until coated.
  6. Serve immediately, optionally garnished with toasted sesame seeds.
