Instructions

  1. Brine the turkey by mixing buttermilk and hot sauce in a large container. Submerge the turkey in this mixture and refrigerate for at least 8 hours or overnight.
  2. Prepare the coating by mixing flour, garlic powder, onion powder, paprika, salt, and pepper in a separate bowl.
  3. Heat oil in a deep fryer or large pot to 350°F (175°C).
  4. Remove the turkey from the brine and allow excess liquid to drip off. Dredge thoroughly in the seasoned flour mixture.
  5. Carefully lower the coated turkey into hot oil and fry for about 3-4 minutes per pound until golden brown and cooked through.
  6. Let it rest on paper towels after frying before slicing.
