  • ¼ cup fresh parsley, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup extra virgin olive oil (120ml) for frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large mixing bowl, combine the grated zucchini with flour, eggs, Parmesan cheese, minced garlic, dill, parsley, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat until shimmering.
  4. Scoop about two tablespoons of the mixture for each fritter and gently place them in the hot oil without overcrowding.
  5. Fry for 3–4 minutes on each side until golden brown and crispy.
