Ingredients

Scale
  • 4 medium Russet or Yukon Gold potatoes, peeled and diced
  • 1 medium yellow onion, diced
  • 2 medium carrots, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prep your veggies by peeling and chopping the potatoes into small cubes. Dice the onion and carrots finely, and mince the garlic.
  2. In a large pot over medium heat, add a splash of olive oil. Sauté diced onion and carrots for about five minutes until softened; add minced garlic and sauté for another minute until fragrant.
  3. Add potato cubes and vegetable broth to the pot; bring to a boil, then reduce heat and simmer for about 20 minutes or until potatoes are fork-tender.
  4. Blend the soup until smooth using an immersion blender or by carefully transferring it to a traditional blender. For added texture, blend only half of the soup before mixing it back in.
  5. Return the blended soup to low heat; stir in coconut milk, dried thyme, salt, and pepper until well-combined and heated through.
  6. Ladle into bowls, garnish with fresh herbs or croutons if desired, and enjoy warm.
