  • 1 lb gnocchi (fresh or frozen)
  • 4 cups fresh baby spinach
  • 1 can (14 oz) marinated artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 2 cups shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large pot of salted boiling water, cook gnocchi according to package instructions until they float (about 2 minutes). Drain and set aside.
  3. In a mixing bowl, combine softened cream cheese, garlic powder, Italian seasoning, salt, and pepper until smooth.
  4. Fold in fresh spinach and chopped artichokes into the cream cheese mixture.
  5. Gently stir in the cooked gnocchi until evenly coated.
  6. Transfer to the prepared baking dish, top with mozzarella cheese, and bake for 20-25 minutes until golden brown and bubbly.
