  • 1 can (15 oz) organic chickpeas, drained and rinsed
  • 2 tsp smoked paprika
  • 2 cups assorted vegetables (bell peppers, zucchini), chopped
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley or cilantro, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • Salt and pepper to taste
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss chopped vegetables with olive oil, salt, and pepper. Spread on a baking sheet.
  3. In another bowl, coat chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a separate baking sheet.
  4. Roast both trays for 25-30 minutes until the veggies are tender and lightly charred.
  5. Combine roasted chickpeas and veggies in a serving bowl. Squeeze fresh lemon juice over the top and garnish with fresh herbs before serving.
