  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp lemon juice
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté chopped onions until translucent (about 5 minutes). Add minced garlic and sauté for an additional minute until fragrant.
  2. Stir in chopped carrots along with cumin, coriander, paprika, salt, and pepper. Cook for another 5 minutes until well combined.
  3. Add vegetable broth and rinsed lentils to the pot. Bring to a gentle boil before reducing heat to simmer.
  4. Simmer uncovered for about 20–25 minutes until lentils are tender, stirring occasionally.
  5. Once cooked, stir in coconut milk and lemon juice. Adjust seasoning if necessary before serving hot.
