  • 2 acorn squashes
  • 1 cup canned pumpkin puree
  • 1 cup chopped onion (about 1 medium)
  • 2 cloves garlic, minced
  • 2 tbsp fresh sage, chopped
  • 2 tbsp fresh thyme, chopped
  • 1/2 cup vegetable broth (low-sodium)
  • 1/2 cup breadcrumbs or cooked grains
  • 1/4 cup feta or goat cheese, crumbled (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Halve the acorn squashes and scoop out seeds. Brush inside with olive oil and sprinkle with salt.
  2. In a skillet over medium heat, sauté onion and garlic until translucent. Stir in pumpkin puree, sage, thyme, vegetable broth, salt, and pepper.
  3. If desired, mix in breadcrumbs or cooked grains along with cheese. Stir gently until well combined.
  4. Stuff each squash half with the filling mixture. Press down lightly for an even distribution of flavors.
  5. Place stuffed squashes on a baking sheet lined with parchment paper and roast for 30-40 minutes until tender.
