  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil

Instructions

  2. Add diced carrots and minced garlic; cook until slightly softened.
  3. Stir in lentils, cumin, and smoked paprika; mix well.
  4. Pour in vegetable broth and crushed tomatoes; bring to boil then reduce heat to simmer for 30-35 minutes until lentils are tender.
  5. Stir in spinach or kale just before serving.
