Hobo Casserole with Ground Beef

  • 1 lb lean ground beef
  • 4 cups Yukon Gold or red potatoes, thinly sliced
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables (or fresh)
  • 2 cups low-sodium beef broth
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, then sauté the diced onion until translucent.
  3. Stir in the frozen mixed vegetables and mix well.
  4. Layer half the sliced potatoes at the bottom of the baking dish, followed by the beef-vegetable mixture, and top with remaining potatoes.
  5. Pour beef broth over everything and cover tightly with aluminum foil.
  6. Bake for about 60 minutes; remove foil for the last 10 minutes to let cheese bubble up before serving.
