  • 2 medium onions
  • 2 medium Yukon Gold potatoes (about 1 cup diced)
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 4 sprigs fresh thyme

Instructions

  1. Preheat oven to 400°F (200°C). Slice off the tops of garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
  2. In a large pot, heat olive oil over medium heat. Sauté chopped onions for 5-7 minutes until translucent.
  3. Add diced potatoes and vegetable broth to the pot. Simmer for 15-20 minutes until potatoes are tender.
  4. Squeeze roasted garlic into the pot and blend until smooth using an immersion blender.
