  • 2 cans (15 oz each) cannellini beans, rinsed and drained
  • 2 medium carrots, chopped
  • 1 medium onion, chopped
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach or kale
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp extra virgin olive oil

Instructions

  1. Prepare your ingredients by chopping the onions, garlic, carrots, and any other vegetables.
  2. In a large pot over medium heat, add olive oil. Sauté onions and garlic for about 3-5 minutes until translucent.

  4. Stir in chopped carrots and rinsed white beans. Pour in enough chicken broth to cover the ingredients by an inch.
  5. Add thyme and bay leaf; bring to a gentle boil then reduce heat to simmer for 20-25 minutes until chicken is cooked through.
