Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh carrots, sliced
  • 2 cups celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 4 tablespoons unsalted butter, melted
  • Fresh herbs (thyme or parsley), for garnish

Instructions

  1. Dice the chicken into bite-sized pieces and chop the carrots, celery, onion, and garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add carrots and celery until tender.
  3. Stir in chicken and minced garlic; cook until the chicken is no longer pink (about 5 minutes). Pour in chicken broth, season with salt and pepper, and bring to a simmer.
  4. In a bowl, combine flour, baking powder, milk, melted butter, and a pinch of salt until just mixed but lumpy.
  5. Using two spoons or an ice cream scoop, drop batter onto simmering broth without peeking for about 10 minutes to steam the dumplings.
  6. Ladle into bowls and garnish with fresh herbs before serving.
